What is end grain butcher block?

End grain countertops show the cut ends of the wood, like the rings on a tree stump. The surface is a grid of 1-1/2" squares, each one the end of a hardwood strip, with every other row offset into a checkerboard. Color and grain shift from square to square across the top.

When you cut on end grain, the knife edge slips between the wood fibers instead of slicing through them. Cut marks tend to close up and show less, and your knives stay sharp longer. That's why checkerboard butcher block has been the chopping surface of choice for butchers and chefs for generations.

Is end grain right for your kitchen?

End grain is the best choice when the counter is a working surface. For long perimeter runs or a lower-maintenance top, edge grain is usually the better fit.

  • Best for: chopping and prep zones, kitchen islands, baking stations and anywhere you want a chopping block countertop with a mosaic look.
  • Plan for: a higher price, since each top goes through two glue-ups with slicing in between; regular oiling, because end grain soaks up oil and water faster than edge grain; and a maximum size of 48" × 120".

How we build it

We start by gluing long hardwood strips edge to edge into a panel, the same way we build an edge grain top. Then we crosscut that panel into slices as thick as your finished countertop, from 2" to 4-1/2". Each slice is turned 90° so the end grain faces up. We shift every other slice to stagger the joints into a checkerboard, then glue the slices a second time into one solid top. Finally, we flatten it and sand the top and all four sides smooth. It's the same method used for end grain cutting boards, scaled up to tops as large as 48" × 120".

The underside isn't graded for appearance and may show minor marks. Add the High-Grade Bottom option when it will be visible, such as under a seating overhang. See how each construction is built in 3D.

Choosing a wood

Pick a wood for its color, grain and hardness, and compare species in our wood information guide. Every board is unique, and product photos show one example, so expect natural variation in color and grain.

  • Domestic hardwoods: Hard Maple, Walnut, Cherry, Hickory, White Oak, Red Oak, Ash, Beech, Grey Elm, Poplar and Clear Alder.
  • Softwoods: Knotty Pine and Douglas Fir, for a rustic, cabin-style look. They're softer than hardwoods, so they suit lighter use.
  • Imported and exotic hardwoods: Sapele, African Mahogany, Genuine Mahogany, Brazilian Cherry (Jatoba), Spanish Cedar, Purpleheart and Zebrawood.

Genuine Mahogany comes from Central and South America. African Mahogany is a related African wood with a similar warm, reddish look.

Frequently asked questions

Is end grain really easier on knives?

Yes. The blade slips between the wood fibers instead of cutting across them, so the edge stays sharp longer and cut marks show less. It's the main reason chefs choose end grain for their chopping surface.

Is end grain butcher block worth the extra cost?

If you chop directly on your counter, yes. End grain costs more because each top is glued up twice, sliced and reassembled in between, which takes more lumber, labor and sanding. If you'll mostly use cutting boards, edge grain costs less and needs less upkeep.

How do I care for an end grain countertop?

Oil it whenever the surface looks dry, and more often in the first few months. Wipe up spills promptly and don't let water stand on it. Our installation, care and maintenance guide covers the details.

How thick is an end grain countertop?

Our end grain tops run from 2" to 4-1/2" thick in 1/4" steps. Thicker tops add stiffness for overhangs and give an island a chunkier, classic chopping-block look.

What's the largest end grain countertop you make?

Up to 48" deep and 120" long. For a bigger island, edge grain goes up to 84" deep, or we can prep two end grain tops to butt-join with countertop bolts.

Can an end grain countertop go around a sink?

It can, but edge grain is usually the better choice for a sink run, because end grain soaks up water faster. Our warranty doesn't cover mineral oil or Salad Bowl Finish tops installed around a sink. If you want end grain there, choose the full-fill polyester finish, keep the cutout edges sealed and install the sink with adhesive and a moisture barrier. A polyester finish isn't meant to be cut on, so you may prefer to keep end grain for a separate prep island and put the sink in an edge grain run.

How long will it take to get my countertop?

End grain tops ship in 2 to 3 weeks, plus transit time.
